It takes 5 years from picking to the first release of Three Squirrels. Just like top champagnes, which is unsurprising because it’s made in just the same way. But not with the same grapes. Three Squirrels is a blend of Muller Thurgau, Huxelrebe and Reichensteiner, three German crosses from vines planted a quarter of a century ago. Dermot Sugrue at Wiston, winner of a hatful of awards, has done the second fermentation. We think the blend is unique in the UK and some people say they prefer it to champagne; do you?
