The ancient 14th century underground cellar that belongs to the Pascual family is situated in Fuentelcésped, in the province of Burgos; this wine region, Rias Baixas, forms part of the much wider Ribera del Duero wine area. The counterpoint of this ancient underground cellar is the present octagonal-shaped modern winery; its stainless steel vats have capacity to elaborate 500,000 litres of must in perfect fermentation conditions; the red wines are aged in a mix of French and American oak, with capacity to store up to 2,000 barrels. Bodegas Pascual own 35 hectares of vineyards arranged in wire-trained vines and bush vines some of which are more than 100 years old. The vineyards are cared with loving dedication, avoiding weed-killers and other aggressive treatments.
